An AOP Gruyere, made with raw cow’s milk. The ageing process of this particular Gruyere takes place in a sandstone cave, where temperature and humidity conditions are naturally stable. The extended ageing period allows the cheese to develop its structure and to evolve gradually.

Smooth, supple and homogeneous texture, with crystals. An aromatic profile marked with notes of ripe fruit and hazelnut, sometimes slightly caramelised. Precise, without being overpowering. A gorgeous staple on a cheeseboard.

Caring for your Cheese

Keep cut cheeses wrapped in wax paper. Do not use cling film as this makes the cheese sweat.
Store cheese in the warmest part of your fridge. The salad drawer is quite ideal.
Artisanal cheese and mould are natural companions. Simply trim the surface mould before serving.
Always bring cheese to room temperature before serving. In standard temperatures, an hour out of the fridge prior to serving, is ideal.
