A British staple when it comes to cheese, made with pasteurised cow’s milk. Our affineurs work closely with the producers at Colston Bassett Dairy to perfect the recipe especially for them. This is a beautiful Stilton boasting a buttery, silky texture, has the right balance between creamy paste and blue mould [the piercing happens in a later stage of the maturation process], and, unlike any other Stilton sold elsewhere, this one is made with traditional rennet which imparts a longer, more complex flavour. A truly exceptional Stilton.

Caring for your Cheese

Keep cut cheeses wrapped in wax paper. Do not use cling film as this makes the cheese sweat.
Store cheese in the warmest part of your fridge. The salad drawer is quite ideal.
Artisanal cheese and mould are natural companions. Simply trim the surface mould before serving.
Always bring cheese to room temperature before serving. In standard temperatures, an hour out of the fridge prior to serving, is ideal.
