Often referred to as the king of Piedmontese cheese, this Castelmagno DOP di Alpeggio [or Alpage, meaning cheeses made with milk taken from cows that are in pasture during the Summer months], is made exclusively with unpasteurised, Bruna Alpina cow’s summer milk.
It is characterised by the typical flavours of mountain herbs and unique mountain flora that give this cheese a rare and outstanding flavour.
A truly outstanding cheese board piece.
Italy, Piedmont. By Tino Paiolo.
