One of very few British blue cheeses made on the farm, with unpasteurised cow’s milk. Traditional techniques offer complexity and length of flavour of a different sort to its pasteurised counterparts. On the Welbeck Estate, Joe and Randolph have stuck to their principles and painstakingly poured all the traditional knowledge for authentic cheesemaking and all the passion they could muster into Stichelton.
