A semi-mature pecorino, made with the best of Caseificio Busti’s fresh, unpasteurised, organic ewe’s milk. During the maturation, on wooden boards, the cheeses are regularly turned and brushed by hand, to allow the growth of its typical mouldy rind. Unique flavours, intact perfumes and scents of the original grazing.
