This bellota shoulder is made from pigs of the Iberico breed that have been fed on acorns on the Extremadura pastures. The shoulders are then expertly cured in Salamanca for up to 36 months. A lovely Paleta Iberico, with an excellent balance of fat, a nutty aroma, and a long, complex finish.

Always bring charcuterie to room temperature before serving. In standard temperatures, an hour out of the fridge prior to serving, is ideal.
