A soft mozzarella, made with unpasteurised buffalo’s milk. Not to be confused with mozzarella di bufala Campana, this is made in the Treviso area by Borgoluce, a 1200-hectare estate of pastures, woodlands, farms, arable fields, vineyards, orchards, canals, mills and dairies. The milk is obtained exclusively from the buffalos on the farm, and the milk is processed in the dairy next to the buffalo’s barn.

Keep cut cheeses wrapped in wax paper. Do not use cling film as this makes the cheese sweat.
