For five generations, over a century of priceless experience, with rigorous and passionate dedication, the Pastor family has reared and naturally fed their own Duroc pigs, and processed the hams to produce this gorgeous Spanish Jamon de Teruel DOP. The whole of the curing process is done manually, in natural drying sheds in Rubielos de Mora, at over 290m of altitude, where the skin-on hams are left to ‘sweat’ the fat to penetrate the lean parts, protected by the rind, and not by additives and preservatives, at a wonderfully slow pace. The hams are then aged in natural underground cellars for several years.

A good marbling of fat, well-balanced in flavour, intense and complex, with a lovely lengthy finish.
