The filleto lardellato is considered an excellence of the territory of Valle d’Itria in Puglia. At Santoro, this product is made from pork fillet that is close to the pigs’ chest. Once trimmed, the whole pieces are hand sprinkled with salt and pepper, and then placed in mulled wine to marinade for a short period. They are then hung to mature naturally, and onto their final stage – delicate smoking over burnt wood and mediterranean herbs.
A wonderful addition to a charcuterie board paired with freshly baked bread. It is also great in risotto or pasta, especially when paired with pumpkin.
