Prosciutto Crudo di Cinta Senese
Unlike any other prosciutto crudo, an intense and prolonged flavour, exquisitely balanced by the delicate and sublime taste on the fatty part, with a wonderful, melt-in-the-mouth texture.
The unique taste of this prosciutto comes from the ancient breed of pig of the Tuscan region, the Cinta Senese, which takes its name from the ‘belt’ of lighter hair around the pig’s middle. It is the only native breed to survive extinction thanks to the relentless work of local farmers and of the Slow Food Presidium. Ours comes from Antica Macelleria Falorni, butchers and artisans of charcuterie in the stunning Greve in Chianti since 1806. They’ve been rigorously curing charcuterie for nine generations now, it is no small wonder they are artisanal geniuses at it. Their prosciutto di Cinta Senese is unmissable.
At its best when served simply with fresh crusty and olive oil. Pairs beautifully with a red Chianti.
