A ground-breaking pecorino, made with pasteurised ewe’s milk, one created by the Busti family to embody the best of Tuscan cheesemaking traditions.
Aged for a minimum of 18 months, this pecorino develops a unique, crumbly, soluble texture with a rich and full-bodied flavour, and a well-defined aromatic complexity. Lactic notes with hints of melted butter and dried fruit. Given the long ageing process, this truly unique Pecorino displays a surprisingly pleasant long aftertaste with a very well structured and balanced sweetness.
