A wonderful Sicilian cheese, with a complex but delicate taste, made with unpasteurised Comisana and Valle del Belice sheep’s milk. Sheep are fed with fodders cultivated by the same caseificio without the use of pesticides or phytosanitary products. A mild cheese but with pleasant floral and grass hints, enhanced with the aromatic and delicate taste of the peppercorns. Superbly well balanced, equally beautiful in a cheese platter as it is in cooking.

Caring for your Cheese

Keep cut cheeses wrapped in wax paper. Do not use cling film as this makes the cheese sweat.
Store cheese in the warmest part of your fridge. The salad drawer is quite ideal.
Artisanal cheese and mould are natural companions. Simply trim the surface mould before serving.
Always bring cheese to room temperature before serving. In standard temperatures, an hour out of the fridge prior to serving, is ideal.
