A DOP pecorino, produced by pastors and excellent cheese makers, Bussu brothers, in the heart of Sardinia, using organic, unpasteurised milk obtained from Sarda sheep of their own flock. The taste is long, earthy, gently smokey, with hints of fresh grass and flowers.
Gorgeous over pasta dishes, with artisanal bread and charcuterie, and with intense red wines.
