Turnip Tops [Cime di Rapa]
These turnip tops are grown according to organic farming methods in the fields of the DeCarlo family’s farm, preserved and enhanced with herbs also grown on the family’s lands and their own extra virgin olive oil.
A symbol and peculiarity of Apulia, savour in panzerotti and on pizza, in starters, or as a side dish with grilled or boiled meats [ribollita]. Widely used as the main ingredient in the iconic southern Italian dish, the much-appreciated ‘Orecchiette con Cime di Rapa’ [orecchiette pasta with turnip tops].
