Pestato di Peperoni Rossi e Pancetta

A wonderful pesto of red peppers and pancetta [unsmoked bacon] in extra virgin olive oil. Use in pasta or rice, on salads and vegetables, as a side to meat and poultry dishes, or on crackers as an aperitivo piece topped with a sun-dried cherry tomato.
