A delightful Parmigiano Reggiano, made with unpasteurised milk obtained solely from Bruna Italiana cows.
The Bruna cow stands out for the balance between quality and quantity of milk it can produce, making its milk particularly suitable for cheese-making. The Parmigiano Reggiano DOP obtained with this milk is very elegant, with a sweet and creamy, very well balanced flavour. The Bruna breed’s milk is denser than the Frisona’s one. The cheesemaker needs 50 litres more milk to produce a single wheel of Parmigiano, while the process requires greater knowledge, especially during the curd-breaking phase.
