This oil comes from an organically curated olive grove of around 15 hectares in Sicily’s Monti Iblei, where the 80-year-old Murmurigna and 40-year-old Nocellara Etnea, Biancolilla and Zaituna olives are cultivated. Just within three hours of the picking, the olives are pressed and left to decant in stainless steel tanks, before filtering of impurities takes place. A wonderful, round and full flavour in this finishing olive oil, best enjoyed with warm crusty bread, in soups, pasta dishes, and on carpaccio.
