Cured meat, prepared from the cheek of the Nebrodi Black Pig, in the North East of Sicily.

Under the Slow Food Presidium, pigs are raised in the Nebrodi mountains, in a park of around 100 hectares, full of oaks, pastures where pigs live wildly, eating acorns, chestnuts and wild mushrooms. According to the Presidium, pigs are raised for at least two years ‘en plein air’.

Guanciale is the main ingredient of pasta alla carbonara and pasta all’amatriciana. Gives outstanding finishing flavours to slow cooked meat dishes and ragù. Also beautiful thinly sliced on grilled hot crusty bread.
