A naturally leavened [sourdough] cake [pandolce]. A nod to the London Mule cocktail, this deliciously moreish cake combines ginger with candied lemon and a generous soak of AcqueVerdi de La Valdotaine gin. No colour, no preservatives, no mono and diglycerides. From Baghi’s, genuinely slow made using sourdough, stone-ground Italian flour, fresh free-range eggs and Belgian butter. Baked under vacuum for maximum freshness in a reusable Weck jar.

Try slightly warmed up [ideally bain marie] with some artisanal ice-cream, for a delicious dessert.
