Caught during the coastal fishing season, in the months just after the winter, along the north coast of Spain, using traditional fishing methods. The Cantabrian anchovies have the possibility to eat a lot, in a water more oxygenated and colder than those of the Mediterranean. The fish develop a layer of fat that makes the meat juicy and firm.

Compact to the palace, pleasantly sweet and sapid, never salty. Every single fillet is rigorously cleaned, boned and packaged manually.
