Salt flakes from subterranean salt springs in Villena, Spain. Harvested by hand and dried by the Alicante wind and Mediterranean sun. They are then infused in oil obtained from sun-dried lemons with a green drizzle of lemon thyme.
Ideal for any fish dish, and for vegetables that crave that dash of citrus.
