Made from carefully selected Italian pigs, reared in the Po Valley, an area with a high dairy production and therefore rich in whey, which gives the meat those creamy flavours. These are very probably the best breeding pigs in Europe.
The thighs are freshly salted with sea salt from Margherita di Savoia in Puglia, followed by slow, slow seasoning, allowing the hams to age in peaceful silence, improving in aromas and flavours as the months pass by. Aged for 16 months +.
A remarkable prosciutto, luscious, tender, sweet flavour. A perfect match to melon, for a classic starter with plenty of gusto.
